Okay so for once Yum Yum's will be posting WOOO. :) Anywhooo, so yesterday was mother's day. Nommie and I have been baking for friends or parties,or just to try stuff out. Well my mother has been...hmm how would I say COMPLAINING? yes thats the word- about how I haven't made her anything blah blah blah. So hey its mothers day why not?! so here we go :)
So right here is the beginning of something I would have to say was YUM. I pretty much was looking for some white chocolate raspberry cookies or something to that affect and found NOTHING! so hey why not make it your self Yum Yum's?! sooo I did :) as you can see (well yea duh they can theres a picture) its NOT gross looking its just butter ,sugar and vanilla right there.
Now right above ^ is the close-to-finish of the dough part. Now I was pretty much making up as I went with these cookies. I followed a basic vanilla cookie recipe. (no I don't have the site because I grab and take from several sorces and tweak it)
Ahh finished....well not quite. well I know you can see the pieces all up in the dough and wondering hmm is that chocolate chips?
well let me answer that burning question:no it isn't. Like I mentioned before i was trying to go for the white chocolate raspberry cookies. Well for some reason Hershey decided that they wanted to discontinue their "raspberry chips" (basically is a chocolate chip but instead its made of raspberry) so I was looking online for something I could use or get my hands on in a day for these cookies. while looking I happened to come across a forum asking the same question and someone said to try to use the Hershey's bliss in the raspberry meltaway one. So I bought a bag and took maybe 10-15 and cut them up into little cubes and threw them in the mix.
So as you can see they are in my oven :) well they were very hard to manage. very sticky so next time I will be using a ice cream scope with the ...metal thing to make it come out easier. But they spread out a lot while they were cooking. so space is the answer here kiddies.
Mmmmm looks good. Well as you can plainly see they came out looking real good. They smelled like vanilla goodness. My mom loved them she wanted more. I melted some white chocolate chips and drizzled a small amount on the cookies before i put them in the oven. If you love chewy cookies, vanilla,raspberry and chocolate than this is a must try :)
Recipe:
1-1/2 cup flour
1/2 tsp salt
1/4 baking powder
1/2 cup unsalted butter,room temp(1 stick)
1-1/4 sugar
1-1/2 tsp pure vanilla extract
2 large eggs
10-15 Hershey's bliss raspberry meltaways (cubed)
1/2 cup white chocolate chips (for melting)
Directions:
Preheat oven to 375
In a medium bowl place the flour ,salt and baking powder and wisk till blended.
In another bowl cream the butter will smooth, than add the sugar and vanilla extract, beat till well combined.
Next add eggs to the butter mixture and beat.After add the flour mix and blend well.
Add the bliss chocolates and fold in.
Now make into little ball and place on a cookie sheet lined with parchment paper,add a drizzle of white chocolate before putting in the oven.
Bake for 10-14 minutes ,after cool on a wired rack. and enjoy :)
Mmmmm, these look amazing!!! I think im going to pinch this recipe if you dont mind! :) I've never actually baked cookies before and these look yum!
