Cornbread

Since I have to get rid of my buttermilk before it expires, I went to try cornbread from the recipe here. Although it has been reviewed over 1000 times and it still has a 5 star rating, this wasn't exactly the cornbread taste i was going for. Perhaps I should have looked for corn muffins instead of cornbread, 'cause I do like the ones from Famous Dave's.

I thought this picture looked nice xD


It ended up breaking when I took it out of the pan... probably because I had forgot to grease it xD

Pancake Muffins!

Hey everbody! I got a recipe from http://www.bakerella.com/ for mini pacake muffins! Of course though I have no mini muffin pans so I figured to make them into the bigger muffins.



Although I totally forgot to double the amount since they are supposed to be mini, so my muffins of regular size weren't that big nor did I get a lot of them.




Also, do NOT use the paper! I didn't think about it but the muffins are a bit too sticky to put the paper on and when you take the paper off you just end up messing up the whole bottom of the muffin. They still taste delicious, but just a word of caution :) From the website, the recipe is as follows:

Mini Maple Chocolate Chip Pancake Muffins

1 cup flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 tablespoons sugar
2/3 cup buttermilk
1 egg
2 tablespoons pure maple syrup
2 tablespoons melted butter
1/2 cup milk chocolate chips


Preheat oven to 350 degrees.
Combine flour, baking powder, baking soda, salt and sugar in a medium bowl. Sift together with a wire whisk.
In another bowl, stir buttermilk, egg, maple syrup and melted butter until just combined.
Add wet ingredients to dry ingredients and stir with a spoon until combined.
Stir in chocolate chips. Reserve a few chips to sprinkle on the tops.
Bake for 8-9 minutes.
Makes 24 mini pancake muffins.

Sweet payback.

Hello again bloggers and followers,Yum Yum's here. So lets get this kicked off. As you can see from the tittle its payback! yea not the, Im going to murder you kind.The here's something back ,thanks for doing _______ for me kind. The payback is for my good buddy Nommie :)

Well this actually looks very nasty. I bet you cannot guess what im making from this picture....so todays recipe is called "Easy Strawberry cookies"


You can sort of see it now(meaning all the pink-ness) but this is super easy all you need is cake mix and some other things.


How can you not look at this and say mmmmm.They are super easy so even if this is your 1st time baking or what you can make these.

Recipe
-2eggs
-2/3 veg. shortening
-1 box of strawberry cake mix( you can sub other flavors im sure)
-1/2 cup coconut flakes
-1/2 cup nuts of your choosing (optional)
-1/4 tsp coconut extract
-1/4 tsp vanilla extract


*preheat oven to 350
*combine eggs and shortening in a bowl(it doesn't really combine all that awesome, so if you look at the 1st pic thats how it should look before you continue)
*Add 1/2 of the cake mix and blend well,than add the rest of the mix,vanilla and coconut extract.
*when blended add the flakes and mix with clean,dry hands.(you would add the nuts too if you are adding them)
*With a spoon scoop out some dough and roll into balls than place on cookie sheet described below.(the dough is very oily so make sure your hands are dry when touchy the dough)
*bake on a cookie sheet lined with parchment paper,and spray lightly with butter flavor cooking spray,for 8-10 minutes.(mine took 15 minutes so watch it carefully)
*let cool and firm up than enjoy :)

Flour in THEE house!!!

Sooo Yum Yum's here! HELLO WORLD! Okay now to the topic at hand,cookies! Yes cookies. I don't know what woman doesn't have a craving for chocolate sometime every month. Well I don't really like to eat chocolate like water,but I was wanting some chocolate overload this time. Hmmm okay sounds fair enough....walk over to cupboard....OH! theres a problem....NO FLOUR!!! WHAT?! how can there be no flour :( Well I told my mom to get some asap,Because I wanted to make some chocolate cookies!


Well as you can see cookie dough was started,meaning pshh my mom only needed to hear once that I was making Chocolate Cookies. So here is just the wet stuff before the flour and whatnot.



As you lovely bakers can see I have a hand electric mixer. If you have one do not be shy,it works a lot when making yummy's. Well to a certain point anyway ,with cookie dough.


Mmmmmm looks good don't it? Yes it looks super good already...well wait till they are baked! Yes you guys can see now its double chocolate cookies. Best thing on earth let me just say. I looked up multiple recipes for these cookies and found the best one,but the website is down right now so I will put the recipe in .I did look at all reviews though and changed somethings to it. Like the sugar. Recipe calls for 1-1/2 cups of white sugar. Well I did 1 cup white and 1/2 cup of light brown sugar(lightly packed).

Yes,Mmmm looks too good! Well let me just say I think the site needs to change the name of them cookies. They were more like brownies! OMG very good and like an explosion of chocolate in every bite! Quote from my mom "I don't want them,but at the same time I cant stop myself from picking up another one..." If thats not enough for you guys make them and go to heaven .

Recipe:
1 cup butter,soften'd
1 cup white sugar
1/2 cup light brown sugar(lightly packed)
2 eggs
2 tsp vanilla
2/3 Cocoa powder
2 cups flour
3/4 tsp baking soda
1/4 tsp salt
2 cups of semi-sweet chocolate chips

*Preheat oven to 350
*In large bowl, beat butter, sugar, eggs, and vanilla until light and fluffy.
*Combine the flour, cocoa, baking soda, and salt; stir into the butter mixture until well blended.
*Mix in the chocolate chips.
*Using a table spoon scoop cookie dough and roll into ball with hands and place on a cookies sheet lined with parchment paper.
*Bake for 8-10 minutes (now you must watch it after this time, I took mine out after 8 minutes and it still wans't done,it took up to 15 for mine to be just right)
let cook and enjoy :)

Nommie's Mother's Day!

So this is what I made for my mom.

Banana Chocolate Cupcakes with Peanut Butter frosting! The Peanut Butter Frosting was left over from my boyfriend's cake which I had made the day before. The Cupcake part is from Hello Cupcake! I decided to test out their recieps in the back and try to make box mix delicious and boy was this recipe GREAT! I am sooo serious it was sooo good. I had to go out and buy buttermilk but I'm sure that that helped make them deeeelicious!





The recipe from Hello Cupcake to make your box mix yummy goes as follows:
Banana Chocolate Cupcakes
1 box devil's food cake mix
1 cup mashed bananas (about 3 medium)
1 cup buttermilk (in place of the water called for on the box)
vegetable oil (the amount on the box)
4 large eggs (in place of the number called for on the box)
and then you just mix it like you normally would! :)

Mothers day baking :)

Okay so for once Yum Yum's will be posting WOOO. :) Anywhooo, so yesterday was mother's day. Nommie and I have been baking for friends or parties,or just to try stuff out. Well my mother has been...hmm how would I say COMPLAINING? yes thats the word- about how I haven't made her anything blah blah blah. So hey its mothers day why not?! so here we go :)
So right here is the beginning of something I would have to say was YUM. I pretty much was looking for some white chocolate raspberry cookies or something to that affect and found NOTHING! so hey why not make it your self Yum Yum's?! sooo I did :) as you can see (well yea duh they can theres a picture) its NOT gross looking its just butter ,sugar and vanilla right there.

Now right above ^ is the close-to-finish of the dough part. Now I was pretty much making up as I went with these cookies. I followed a basic vanilla cookie recipe. (no I don't have the site because I grab and take from several sorces and tweak it)

Ahh finished....well not quite. well I know you can see the pieces all up in the dough and wondering hmm is that chocolate chips?
well let me answer that burning question:no it isn't. Like I mentioned before i was trying to go for the white chocolate raspberry cookies. Well for some reason Hershey decided that they wanted to discontinue their "raspberry chips" (basically is a chocolate chip but instead its made of raspberry) so I was looking online for something I could use or get my hands on in a day for these cookies. while looking I happened to come across a forum asking the same question and someone said to try to use the Hershey's bliss in the raspberry meltaway one. So I bought a bag and took maybe 10-15 and cut them up into little cubes and threw them in the mix.

So as you can see they are in my oven :) well they were very hard to manage. very sticky so next time I will be using a ice cream scope with the ...metal thing to make it come out easier. But they spread out a lot while they were cooking. so space is the answer here kiddies.

Mmmmm looks good. Well as you can plainly see they came out looking real good. They smelled like vanilla goodness. My mom loved them she wanted more. I melted some white chocolate chips and drizzled a small amount on the cookies before i put them in the oven. If you love chewy cookies, vanilla,raspberry and chocolate than this is a must try :)

Recipe:
1-1/2 cup flour
1/2 tsp salt
1/4 baking powder
1/2 cup unsalted butter,room temp(1 stick)
1-1/4 sugar
1-1/2 tsp pure vanilla extract
2 large eggs
10-15 Hershey's bliss raspberry meltaways (cubed)
1/2 cup white chocolate chips (for melting)

Directions:
Preheat oven to 375
In a medium bowl place the flour ,salt and baking powder and wisk till blended.
In another bowl cream the butter will smooth, than add the sugar and vanilla extract, beat till well combined.
Next add eggs to the butter mixture and beat.After add the flour mix and blend well.
Add the bliss chocolates and fold in.
Now make into little ball and place on a cookie sheet lined with parchment paper,add a drizzle of white chocolate before putting in the oven.
Bake for 10-14 minutes ,after cool on a wired rack. and enjoy :)

Banana Cake with Peanut Butter Frosting

Hey there! So today I wanted to make a Banana Cake with Peanut Butter Frosting for my (Nommie's) boyfriend (Chris Redfield). So Yum Yums came over to help and this is how it alllll went down.
These are the bananas. They looked grossed and had like... slime or some shiny wet stuff on them. But they were good.
Yeah, they looked reallllyyyyy gross but tasted sweet and good haha
The stuff we had to mix together also looked gross too. I don't know why everything has to be gross before it is cooked.
And hereeeee is when I unknowingly thought baking powder and baking soda were the same thing since my entire life I have been just interchanging them. So in the later picture I will finally see the connection that I was told about xD
To make the frosting we had to cover it up so that it wouldn't get a film over it. I think that's gross too. I should start a count on how many times a recipe is gross before it's done because it seems to happen a lot.
The finished pb frosting was sooooooo good. I have some left over and I jsut wanna sit in front of my t.v. and eat it out of the bowl.
and here it is, the ridiculously low cake because as I learned from Yum Yums, baking powder does NOT equal baking soda. Lesson well learned although the cake still tasted reallllyyyy good and banana-y.

We didn't follow the whole thing because we substituted milk for the sour cream because the store near my house decided that it wasn't going to have any unless it had onion in it and all the yogurt had to have rasberry swirls. >:(
The Frosting Recipe is from a Hershey's bake... paper book thing.
1 cup of milk
3 tbsp flour
1 cup sugar
1/2 cup creamy peanut butter
1/2 cup of shortening
1 tsp vanilla extract
"dash of salt" (whooo way to be descriptive)
Stir the milk into flour in small sauce pan over low heat, continously stirring until very thick (very thick wasn't "very thick" at all, I don't know what they were thinking). Remove from pan into bowl and cover with pastic wrap, pressing down so it touches it,so that no film (something else gross) can form. Cool at room temperature for 30 minutes. Then add all other ingredients and beat on high until fluffy and sugar is dissolved.
